Avocado and Grapefruit Salad
From Jacque Munns

6 medium ripe avocados - sliced
1 pink grapefruit, sliced

Dressing:
1/2 tsp kosher salt
1/4 tsp ground pepper
1/2 tsp chopped garlic
1 Tbsp chopped red onion
Zest of one lemon
Juice of one lemon
1/4 cup Dijon mustard
1/2 c olive oil

Mix dressing ingredients and refrigerate for several hours. Arrange avocado and grapefruit slices on a plate and drizzle with dressing.
